Sugar-Free Coconut Macaroons

These Candida-friendly, Sugar-Free Coconut Macaroons are rich in caprylic acid from coconut to help knock out Candida overgrowth – in the form of a delicious dessert.

1 cup unsweetened shredded coconut

1 large egg white, at room temperature

3 tbsp coconut oil, melted

1 tsp vanilla extract

Stevia to taste

Optional: Sugar-free chocolate, melted for drizzling


1. Preheat oven to 350F, and line a baking sheet with parchment paper.

2. Combine all ingredients together in a bowl, mixing well to form a moist sticky texture.

3. Form macaroons into balls/haystacks and place them on the baking sheet. (They will be slightly crumbly, but once baked they hold together nicely).

4. Bake for 17 – 20 minutes till golden. Remove from the oven and let them cool.
