INGREDIENTS
3 tbsp almond flour
1 tbsp coconut flour
1 tbsp coconut oil melted
1 tbsp cacao powder
1 tbsp cacao nibs or sugar-free chocolate chips
1 egg
½ tsp baking powder
½ tsp vanilla extract
Stevia to taste
DIRECTIONS
1. Preheat oven to 350F.
2. Melt 1 tbsp of coconut oil in a small saucepan. Once melted, whisk together with egg and vanilla.
3. Combine all dry ingredients (except cacao nibs) in a small bowl. Fold dry ingredients into wet ingredients, mixing well to form a cake batter. Stir in chocolate chips.
4. In a greased oven-safe ramekin, pour in your batter, and bake for 20 minutes until an inserted toothpick comes out clean.
5. Enjoy warm.
