If you’re looking for a way to use up all the mint that has taken over your garden, this is the ticket. Paired with lemon and garlic, this minty dressing is great drizzled on the greens of your choice, and is especially delicious atop fresh summer produce. Bonus: Mint is great for helping relieve symptoms of indigestion.
½ cup extra virgin olive oil
¼ cup fresh lemon juice
¼ cup finely chopped fresh mint leaves (2 Tbsp dried)
1 large garlic clove, minced
Salt and pepper to taste
- Blend all ingredients together in a blender or food processor until smooth. (If you don’t have a blender or food processor, just chop the ingredients finely and shake in a jar.)
- Store in an airtight container in the refrigerator.
