Chia pudding

Chia seeds are considered a superfood for a reason. They’re a fantastic source of fibre, loaded with antioxidants, filled with omega-3 fatty acids, and high in protein. When soaked in liquid, they form a pudding-like consistency, and mixing in some added flavouring makes for a great dessert.

INGREDIENTS
1 cup full fat coconut milk
1⁄4 cup chia seeds
1 tsp alcohol and sugar-free vanilla extract
Stevia or xylitol to taste
1⁄4 cup chopped pecans, almonds, or walnuts (optional)

DIRECTIONS

  1. Add all ingredients to a mason jar or container with a tightly fitting lid.
  2. Shake to combine.
  3. Let sit in the fridge for 20 minutes to 1 hour.

NOTES

  • Play around with the consistency, add more chia seeds if you’d like it thicker, or add more liquid if you find it too thick.
  • Add a pinch of sea salt or cinnamon to jazz it up.
