Black beans and avocado are a dynamic duo in this fresh and hearty salad.
Loading up on protein and healthy fats at lunchtime is a sure-fire way to
make sure you stay satiated throughout the afternoon.
2 Tbsp lime juice
2 Tbsp olive oil
½ cup cilantro leaves
1 clove of garlic, minced
½ tsp salt
Stevia (the equivalent of
¼ tsp of sugar)
1 ½ cups cooked black beans
1½ cups thinly sliced cucumber
½ cup of diced red onion
2 avocados, pitted, peeled, and diced
- Process lime juice, olive oil, half of the cilantro, garlic, salt, and stevia until smooth.
- Mix beans, cucumber, onion, and cilantro leaves.
- Toss with dressing and avocado just before serving on a bed of shredded lettuce.
