Black bean and avocado salad

Black beans and avocado are a dynamic duo in this fresh and hearty salad.
Loading up on protein and healthy fats at lunchtime is a sure-fire way to
make sure you stay satiated throughout the afternoon.

2 Tbsp lime juice
2 Tbsp olive oil
½ cup cilantro leaves
1 clove of garlic, minced
½ tsp salt
Stevia (the equivalent of
¼ tsp of sugar)
1 ½ cups cooked black beans
1½ cups thinly sliced cucumber
½ cup of diced red onion
2 avocados, pitted, peeled, and diced
Shredded lettuce


  1. Process lime juice, olive oil, half of the cilantro, garlic, salt, and stevia until smooth.
  2. Mix beans, cucumber, onion, and cilantro leaves.
  3. Toss with dressing and avocado just before serving on a bed of shredded lettuce.
