Almond Flour Pancakes

Enjoy your weekend brunch – Candida-style!
These cleanse-friendly pancakes are so deliciously satisfying. Double the batch to freeze leftovers for a quick breakfast that can be reheated in the toaster throughout the week!

INGREDIENTS

⅔ cup almond flour
1 egg
5 tbsp water
⅔ tsp baking powder
½ tsp cinnamon
1 tsp xylitol (or stevia/monk fruit to taste)
a pinch of salt

OPTIONAL TOPPINGS
Almond butter (mixed with cacao powder)
Cacao nibs
Chopped nuts
Coconut flakes
Coconut oil (instead of butter)

DIRECTIONS

1. Sift together dry ingredients, then add wet ingredients. Whisk till smooth.

2. In a frying pan, heat coconut oil over medium heat. Add pancake batter, and cook until bubbles form and the edges are dry, about 2 to 3 minutes.

3. Flip and cook until browned on the other side. Repeat with the remaining batter. Makes about 3 pancakes.

4. Top with your desired Candida-friendly garnishings. Enjoy!
